Baked Eggplant

Eggplant has recently become one of my favorite vegetables. I have been trying out different methods of preparing it, and I decided that I like it best when baked. 

This recipe is really simple and only requires 4 ingredients. It tastes like a fat-laden, fried comfort food, but it does not contain any oil or saturated fat.

A medium eggplant should make about 3 servings.

  • 1 medium eggplant
  • 1/4 cup reduced-fat Veganaise
  • 1/4 cup grits
  • 1/4 tbs. sea salt

  • Preheat oven to 350º
  • Spray cookie sheet with non-stick cooking spray
  • Cut eggplant into 18 slices {about 1/2 in. each}
  • Combine salt with grits in small bowl
  • Spread 2 tbs. of Veganaise evenly onto eggplant slices and then sprinkle 2 tbs. grits on top
  • Flip slices and repeat on other side
  • Place eggplant in oven and cook 10-12 minutes {until grits turn golden-brown}
  • Flip slices and bake on other side for the same amount of time
