Cake Batter Pudding

What do you get when you combine cake mix, pudding mix, and a touch of water?
Cake batter pudding!
I'm sure that some of you think this sounds gross, but i promise it's good! You just have to trust me.

The combination of ingredients makes for a dense yet still creamy pudding that is sure to satisfy any sweet tooth or craving.

I even made some sugar-free sprinkles* to go on top!

*Sprinkles = 1 cup erythritol + 1 drop natural food coloring (0 calories)

The reason the pudding is this  color is because of the flour. Using white flour will give it more of a "cake batter" look.

  • 2 tbs. soy milk powder
  • 1 tbs. erythritol
  • 2 tbs. buckwheat flour
  • 1 tbs. cornstarch
  • 1 tsp. vanilla
  • 6 tbs. boiling water
  • Combine dry ingredients and vanilla in small bowl
  • Add water 1 tbs. at a time, stirring in between spoonfuls
  • Top with sprinkles
