Raw Fig Tarts


As the summer season draws to an end, I have been taking advantage of my last chance to use certain fresh, seasonal foods. My parents have a fig tree in their backyard and I stole their few remaining figs to make these simple tarts. (Shh don't tell them!)
One recipe yields 3 bite-sized tarts.


1 tart is less than 80 calories!

Ingredients:
  • 2 tbs. raw coconut flour
  • 2 tbs. ground flax meal
  • 3 tbs. water
  • 4 small figs
  • 6 drops Stevia extract




Directions:
  • Combine flour, flax meal, and stevia in small bowl
  • Add water 1 tbs. at a time and stir until mixture is soft (but still firm enough to mold)
  • Press into 3 muffin tins (coated with non-stick cooking spray) to form shells
  • Mash figs with fork
  • Fill shells with fig mixture
  • Refrigerate for 30 minutes before eating, or enjoy as-is
