Corn-Free Corn Syrup

In order to make pecan pie, I had to use some sort of sugar syrup. However, I refuse to use sugary processed corn syrup. I decided instead to make my own simple syrup using a Truvia blend (but I'm sure erythritol or xylitol would work as well.)


  • 1 cup Stevia baking blend
  • 1/2 cup water
  • 1/2 tbs. cornstarch
  • 1/4 tsp. cream of tartar
  • Combine ingredients in small saucepan and bring to boil
  • Simmer (covered) for about 3 minutes
  • Continue to simmer (uncovered) for about 5 minutes
  • Let cool
